1. Plan ahead.

A few days before your picnic, think about what food you’d like to serve. Give yourself enough time to shop for all of the ingredients and prepare your meal. Once you’ve fully prepped your menu items, place them in tightly sealed containers or sandwich bags and store them in the refrigerator overnight so they’re ready to pack and go on the day of the picnic.

2. Pick the right food.

So you don’t waste time heating food at the last minute before you head out, opt for dishes that are best served cold or at room temperature. You should also stick to portable food that is easy to eat by hand. Single-serve fare—like salads, sandwiches, bread, cheese, fruit and cookies—is the easiest to serve and eat at a picnic.

To make serving easier, pack your picnic food and supplies in layers: Keep anything you’ll be eating or using first at the top of the basket. Here’s the ideal way to pack your basket, layer by layer:

  • Bottom: Line the bottom of your basket with paper towels and cleaning cloths, since you won’t need them until the end of the picnic. Then, stack heavier items on top, like wine bottles, thermoses and ice packs.
  • Middle: Neatly stack your plates and cups along the side of the picnic basket so they’re easily reachable when you’re ready to eat. Nestle the food and dessert containers in between the cups and the plates, and lay utensils individually wrapped with napkins on top. Make sure all perishable food is sitting on top of the ice packs.
  • Top: Softer items—like salad, bread, individually wrapped sandwiches, chips and cookies—should sit at the top of the basket to prevent them from getting crushed. To cap everything off, fold up your picnic blanket and place it at the very top of the basket. That way you won’t have to dig around for your blanket when you’ve arrived at your picnic spot, and it’ll give your basket some extra protective cushioning.

4. Scout out the best picnic location.

You’re ready to grab your basket and go! A great picnic isn’t just about the food; it’s also about the fresh, natural surroundings. Pick a beautiful, sunny spot that’ll set the mood you want for your picnic, whether it’s romantic and secluded, or lively and family-oriented.

Summer is in full force right now and I can’t imagine not wanting to enjoy the great outdoors, even if it’s just your local park or backyard and a basket of food. Welcome back readers,

I hope everyone had a fantastic Easter and didn’t eat their way into an early coma like I did! I asked that if any of you had some great desserts or decorations you made for Easter to send me a picture and thankfully one reader, Sharon, sent me a picture of some creative and delicious chocolates she made! Seriously awesome decorating skills on these chocolates!  It’s never too late to send it your own pictures if you still have them, especially if you tried out any of the recipes we’ve posted. Now, on with the show…

Last week I asked you all to vote in the comments section on what you wanted me to write about and the clear winner for the week has been picnics! Coffee and tea came in second with fitness following close behind, but clearly everyone is very excited about this nice Spring weather and can’t wait to get out and enjoy it (without breaking a sweat that is).

Picnics should be fun and easy, something you can throw together in a few minutes. So I have a couple of sandwich recipes that would be perfect for a Spring picnic, as well as a few suggestions to make your time outdoors a little more comfortable.

Peanut Butter Banana Sandwiches

This is an absolute favorite of mine! All you need is some bread, peanut butter (I prefer smooth), sliced bananas and you’re good to go. I like to add a few extras to my sandwiches for more flavor and components. I usually add some honey and granola mix, gives it extra flavor and a little extra crunch.

Peanut Butter Apple Sandwiches

Are you sensing a theme or my love of peanut butter? You can always substitute peanut butter for any other nut butter (almond, sunflower, etc.) or if you want to make it a super sweet treat you can add Nutella. For this “sandwich” I don’t actually use bread, instead I slice apples to be the holders. You spread peanut butter (or whichever you prefer) on the apple slices, add granola or chocolate chips (or both!) and stack the slices together to form a sandwich. It’s a fun and healthy treat that is very easy to make!

For picnics, you can generally use any kind of outdoor blanket or mat and you’ll be fine, but the problem always lies with where and how you’re sitting. Sitting outside is probably one of the more uncomfortable things since the invention of the sofa, so it’s hard to get used to (especially if your knees are about 40 years older than you are like some blog writers). So I have two cheap options for outdoor seating to make your picnic a bit more comfortable! Our first one is from Target, a reclining picnic seat. It seems like it would be nice for back support and easy to pack up and go with. I’m probably the clumsiest person around though, so I would find some way to keep falling back on myself. So I have a second option from IKEA for us…balance challenged people out there. It’s technically a stool, but it’s also very sturdy, wide and doesn’t seem like it would fall over on you! All the makings of an easy picnic seat (for me at least!).

I don’t know about all of you, but I’m kind of worn out from all the Valentine’s celebrations this month. Today is going to be a somewhat light day, but still with some good information! Another “sort-of” holiday that I like is coming up for me and I really couldn’t be more excited. Chicago’s Annual Restaurant Week kicks off this weekend I plan on trying as many weird dishes and meals that I can handle! I have basically been reading up on menus all week in preparation and trying to figure out where to make reservations. For anyone who is unfamiliar, during Restaurant Week, hundreds of participating restaurants create a special fixed price menu with a selection of appetizers, main course, and dessert dishes to try, usually at a lower cost than normal. It’s a great way to get out of habitual restaurants and go out there to find new things (and food, of course)! So naturally, I love it.

I like to think I’m a pretty adventurous eater when it comes to trying new foods. I think escargot is amazing and I want to incorporate pork belly into every meal that I have, however, I will never touch sea urchin again. It looks and feels like a tongue. (Which by the way, tongue, not that great either).

Picnics! Everyone loves picnics; Adults, kids, bears, everyone! July and August fall into the wonderful time known as picnic season, when it’s guaranteed to be nice, sunny, and cheerful out (unless of course you live in the Midwest where it’s apparently ‘anything goes’).
